Fast Bake Bread Hints
• Water temperature must be 110°-115°F/43°-46°C. Use the enclosed yeast thermometer to
check the water temperature.
• When developing Fast bake breads, we found that Quick-Rise™, Rapid Rise™or Bread Machine
Yeast must be used to accomodate this exclusive bread cycle. You will find Fast bake breads also
require more yeast than the other recipes found in the recipe/cook book included with your
bread maker.
• Check the dough ball at the beep or half-way through the second knead. The dough ball for Fast
Bake breads should be a very soft, sticky to the touch, loose ball with a smooth texture. Do not
add extra flour. If necessary, use a rubber spatula to push any floor or dough from the sides of
the bread pan down into the dough ball.
• The increased temperature during the rise and bake process required for this bread cycle may
cause the loaf of bread produced to have a dark crips crust woth a split on the top side of the
loaf.

Fast Bake™Bread Recipe
1.5 lb 2 lbs. pounds
Water (110°-115°F/43°-46°C) 1 cup + 2 TBL 1 1⁄4 cup + 2 TBL
Oil 2 TBL 3 TBL
Sugar 2 TBL 3 TBL
Salt 1 tsp 1 1⁄2 tsp
Dry milk 1 1⁄2TBL 2 TBL
Bread flour 3 cups 4 cups
Red Star Quick-Rise™Yeast 1 TBL 4 tsp
or Bread Machine Yeast 1 TBL 4 tsp
Place ingredients in bread pan in the order listed. Select Fast Bake and press start.
Fast Bake is convenient for baking a hot fresh loaf of bread in under an hour.
