To reverse cutter drum rotation, reverse the hoses on the motor side

of the protection valve.

On quick couplers, the female end is usually the pressure in. Double check the excavator plumbing to insure pressure (in) is on the left side of the of the boom while sitting in the cab. AKA pressure in. This will provide clockwise cutter drum rotation.
