Section 7 Important: Operator Checklist

During Cleaning and Sanitizing

ALWAYSFOLLOW LOCAL HEALTH CODES.
Cleaning and sanitizing schedules are governed by your
State or local regulatory agencies and must be followed
accordingly.The following check points should be stressed
during thecleaning and sanitizing operations.
WE RECOMMEND DAILYCLEANING AND SANITIZING.

Troubleshooting Bacterial Count

j1. Thoroughly clean and sanitize the machine regularly.
This includes complete disassembly and brush
cleaning ofthe required components.
j2. Use all of the supplied brushesfor thorough cleaning.
The brushes are speciallydesigned to reach all mix
passageways.
j3. Use the white bristle brush to clean themix inlet hole
which extends fromthe mix hopper down to the rear
of the freezingcylinder.
j4. Use the black bristle brush to thoroughly clean the
rear shellbearing located at the rear of the freezing
cylinder. Be sure there is a generous amount of
cleaning solutionon the brush.
j5. Using a screwdriver and cloth towel, keep thefemale
drive socket and rear shellbearing free of lubricant
and mix deposits.
j6. Properly prepare the cleaning and sanitizing
solutions. Read and follow the label directions
carefully.Too strong of a solution may damage the
parts and too weak of a solution will not do an
adequate job ofcleaning or sanitizing.
j7. If LOCAL HEALTH CODES PERMIT THE USE OF
RERUN, make surethe rerun is stored in a sanitized
covered stainless steel container and used the
followingday. Discard all rerun once a week.

Regular Maintenance Checks

j1. Replace blades that are nicked, damaged, or worn.
j2. Dispose of o-rings and seals if they are worn, torn, or
fit too loosely.Replace faulty rubber parts with new
ones.
j3. Check the rear shell bearing for signs of wear
(excessive mix leakage from the rearshell bearing
into thefront drip tray).
j4. Follow all lubricating procedures as outlined in
“Assembly”.
j5. On air cooled units, check the condenser for an
accumulation of dirt and lint. Dirty condenserswill
reduce the efficiency and capacityof the machine.
Condensers should be cleaned monthly. Remove
the right side and rearpanels to gain access to the
condenser. Use a soft brushto clean between the
fins. Never use screwdrivers or other metal probes
to clean betweenthe fins.
Note: For machines equipped with an air filter,it will
benecessary to vacuum clean the filterson a monthly
schedule.
j6. On water cooled units, check the water lines for kinks
orleaks. Kinks can occur when themachine is moved
backand forth for cleaningor maintenance purposes.
Deteriorated or cracked water lines should be
replaced onlyby an authorized Taylor mechanic.

Winter Storage

If the place of business is to be closed during the winter
months, it is important to protect the freezer by following
certain precautions,particularly if the building is subject to
freezingconditions.
Disconnect the freezer from the main power source to
prevent possibleelectrical damage.
Onwater cooled freezers, disconnect the watersupply. Use
air pressure to blow out any water remaining in the
condenser,and then add a liberal amount of permanent type
auto anti-freeze. This is extremelyimportant. Failure to
followthis procedure may cause severe and costly damage
to the refrigerationsystem.

Wrap detachable parts of the freezersuch as the beater
assembly and the freezer door. Place these parts in a
protected,dry place. Rubber trim parts andgaskets can be
protected by wrapping them withmoisture-proof paper. All
partsshould be thoroughly cleanedof driedmix or lubrication
which attractmice and other vermin.
