Place the mix hopper cover in position. F or proper
operation, there must be a substantial amount of mix
int hehopper. If the ADD MI X light illuminates, refill the
mix hopper as soon as possible.

Closing Procedure
To disassemble this unit, the following items will be
needed:
STwo cleaning pails
SNecessary brushes (provided with freezer)
SCleaner
SSingle service towels
Draining Product From TheFreezing Cylinder
Step 1
Place the power switch in the OFF position as far
ahead of cleaning time as possible to allow frozen
product to soften for easier cleaning.
Step 2
Remove the hopper cover and the air/mix feed tube(if
the unit is equipped with an air/mix feed tube). Take
these parts to the sink for cleaning.
Step 3
If local health codes permi tth e use of rerun,place
a sanitized, NSF approved stainless steel rerun
container beneath the door spout. Place the power
switch in the WASH position and move the draw
handle to the right. When product stops flowing fr om
the door spout, move the draw handle to the left and
place the power switch in the OFF position. Place the
sanitized lid on the rerun container and place it in the
walk- in cooler.
Note: Iflocal health codes DO NOTpermit the use
of rerun,the product must be discarded. Drain the
product into a pail and properly discard it.
