Quick Strawberry Mousse Filling

An immersion blender makes this a snap to put together.

INGREDIENTS

1/2 cup fresh strawberries 1/2 cup powdered sugar

1 1/2 cups cold heavy cream

METHOD

1In a narrow bowl, combine all ingredients and use an immersion blender to puree and whip the mousse until thick and fluffy. This should only take a few seconds. Don’t over mix or the cream or it will curdle and turn into strawberry-flavored butter! Use to fill any cake you choose.
