CRÊPES AU PANAIS, FINES HERBES

&POLENTA

INGRÉDIENTS

2 tasses de pulpe de panais, égouttée

60 ml (2 oz) de lait

2 oeufs, séparés

¼tasse (45 g) de polenta (farine de maïs)

¼tasse (31 g) de farine

1 c. à thé de thym frais, haché

1 c. à thé de romarin frais, haché

1 c. à thé d’assaisonnement cajun

1 petit poivron rouge, finement haché

1 c. à soupe d’huile

MARCHE À SUIVRE

1.Dans un grand bol, combiner la pulpe de panais, le lait, les jaunes d’oeufs, la farine, la polenta, le thym, le romarin, les épices cajuns et le poivron.

2.Monter les blancs d’oeufs en neige et plier dans le mélange de panais.

3.Dans un grand poêlon, chauffer l’huile et déposer quelques cuillerées de mélange à la fois. Cuire environ 1 min de chaque côté jusqu’à coloration.

Servir immédiatement.

MOUSSE DE PETITS FRUITS & CHOCOLAT BLANC

INGRÉDIENTS

200 g (7 oz) de chocolat blanc

200 g (7 oz) de pulpe de fraises

200 g (7 oz) de pulpe de framboises

3 c. à thé de gélatine, dissoute dans ¼ (30 ml) tasse d’eau chaude

3 jaunes d’oeufs

300 ml (10 oz) de crème à fouetter

¼tasse (26 g) de sucre à glacer, tamisé

2 c. à soupe (30 ml) de Grand Marnier

MARCHE À SUIVRE

1.Faire fondre le chocolat dans un bain- marie, refroidir sans le laisser figer.

2.Combiner la pulpe de fraise et de framboise et réserver.

3.Mélanger le chocolat fondu, la gélatine dissoute et les jaunes d’oeufs et fouetter jusqu’à coloration pâle et brillante.

4.Fouetter la crème jusqu’à la formation de pics, plier dans le mélange au chocolat et ajouter la pulpe mélangée et le Grand Marnier.

5.Verser dans un moule à couronne.

Réfrigérer plusieurs heures ou toute la nuit.
