SUGAR SYRUPS

Simple Syrup ( Version 1 – heavy)

Simple syrups are the b ase of most of the
flavored syrups. We have cr eated two versions;
this one is a true simple syr up, meaning that
it is equal parts su gar to water, while the second
is a bit less concentrat ed. They take little time
to prepare, and are go od to have on hand
to sweeten cold beverage s such as iced coffee
and tea. This version i s perfect for mixing
into cocktails, for i t cuts the bite of the alcohol
a bit better than the ligh ter version.
Makes about 3½ cups
2 cups granulated sugar
2 cups water
1. Put both the sugar and water into a small
saucepan over medium-high heat. Bring to a
boil. Once it boils, reduce heat to medium to
allow mixture to simmer until the sugar has
completely dissolved. Stir occasionally.
2. Remove the saucepan from the heat and allow
to cool completely before using. Syrup can be
stored in an airtight container in the refrigerator
for up to a month.

Simple Syrup ( Version 2 – light)

This is a lighter versio n of our simple syrup.
It’s a bit less concentrate d and has the perfect
amount of sweetness for regular sodas.
Makes about 2½ cups
1 cup granulated sugar
