California SandwichThe variety of textur es in the sandwich, from the cr eamy avocado

preferably when tomatoes are in season.
Makes 4 sandwiches
4 slices whole-grain bread
4 teaspoons Dijon mustard
6 to 8 ounces sliced turkey or chicken breast
1 avocado, pit ted and sliced
1 plum tomato, c ut into 8 slices
8 slices cooked bacon
4 ounces sliced Monterey Jack (about 8 slices)
1. Line the baking pan with foil and fit it with the broiling pan. Lay the
bread on the broiling pan. Spread the Dijon evenly on the tops of the
slices then distribute the remaining ingredients, in the order listed.
2. Adjust the oven rack to position 2 and put the pan in the oven. Select
Sandwich at 400°F for 10 minutes. Cook until the cheese is fully melted
and lightly browned, adding more time if needed.
3. Serve immediately.

8 ounces very thin ly sliced corned be ef (or you may substitu te
pastra mi if you prefer)
6 ounces sliced Swiss cheese (about 8 slices)
