II. PRINCIPLE OF AIR FLOW

The fan-style blower draws air into the oven plenum where it is heated. The blower then pushes the hot air through the air fingers into the baking chamber. Each air finger contains an inner plate and outer plate that form the hot air into jets, distributing it across a conveyor belt on which the food product rides. Air is then pulled back into the blower and the process continues. The curving, black arrows of Figure 1-4 show this air flow.

A. Heat Transfer and How It Works

1.Heat constantly moves from a warm object to a cold object. Heat moves using three different paths: Conduc- tion; Radiation; and Convection.

Conduction: This path utilizes surface-to-surface con- tact. The pizza dough in contact with the pan is a good example of conduction.

Radiation: This path has to do with objects radiating heat. Dark objects absorb heat whereas light or shiny objects

reflect more heat. This is the reason that the inside of a PS540-Series Oven is light in color: To reflect more heat back onto the food product.

Convection: This path has to do with moving a volume of air. It explains why hot air rises and cooler air replaces hot air. An industrial application of this principle is to incorpo- rate a fan to force the hot air movement, which in turn increases the heat transfer to the food product.

Each PS540-Series Oven has a large fan-style blower to move the hot air through the air fingers and onto the product to cook/bake the food product most efficiently.

2.Temperature is the intensity of heat at the point where it is sensed. As discussed above, heat flows by conduc- tion, radiation and convection. The speed at which the heat flows is determined by the temperature difference between the oven and the food product. The larger the difference, the faster the heat flows to the item that is being baked.

Middleby Marshall PS540 (Double), PS540E, PS540 (Triple) II. Principle of AIR Flow, Heat Transfer and How It Works

PS540 (Triple), PS540 (Double), PS540E specifications

The Middleby Marshall PS540E, PS540 (Double), and PS540 (Triple) are advanced commercial conveyor ovens designed to deliver exceptional cooking performance for various food items. These ovens are engineered to provide consistent results while maximizing productivity, making them ideal for busy restaurants, fast-food establishments, and catering services.

One of the standout features of the PS540E is its energy-efficient design. Utilizing advanced jet-air technology, this oven circulates hot air evenly, ensuring that food is cooked thoroughly and consistently. The PS540E's energy-saving capabilities not only reduce operational costs but also minimize heat loss, which is crucial in maintaining a comfortable kitchen environment.

The PS540 series includes both double and triple options, allowing operators to choose the configuration that best fits their space and throughput needs. The double version is perfect for establishments that require high-volume cooking without sacrificing quality, while the triple model offers even greater capacity, making it highly suitable for large-scale operations. This versatility ensures that businesses can optimize their cooking process to meet demand without compromising on food quality.

Another significant aspect of the PS540 ovens is their user-friendly controls. Featuring a digital interface, operators can easily adjust cooking times and temperatures based on the specific requirements of each menu item. This level of control allows for precise cooking, ensuring that everything from pizzas to baked goods comes out perfectly every time.

The ovens are also built with durability in mind. Constructed from high-quality stainless steel, the PS540 series minimizes the risk of wear and tear over time, ensuring a long lifespan and reliable performance under continuous use. Additionally, the easy-to-clean design contributes to efficient maintenance, which is crucial in fast-paced kitchen environments.

Middleby Marshall's commitment to innovation shines through in the PS540 series, emphasizing energy efficiency, capacity, and ease of use. With their combination of advanced technology and robust construction, the PS540E, PS540 (Double), and PS540 (Triple) represent a significant investment for any foodservice operation looking to enhance its cooking capabilities while maintaining high-quality output and operational efficiency. These ovens support a wide range of menu items, making them a versatile choice for modern kitchens aiming for excellence in food preparation.
