Using the thermostatic mixer

Turn the thermostatic mixer handle clockwise to make the water cooler.

Turn it counter-clockwise to make it warmer. The handle will stop at the 100° safety stop.

To override the safety stop, press the override button and continue turning the handle counter-clockwise.
