½ large red bell pepper, cut into
¼ large red onion, cut into
¼ cup heavy cream
½ teaspoon sea salt
¼ teaspoon freshly ground black pepper nonstick cooking spray
4 ounces manchego, shredded

Preheat oven to 375°F.
Combine bacon, red pepper and red onion in a small microwave- safe bowl. Cover with a paper towel and cook in a Cuisinart® microwave on High for 10 minutes.
While the bacon and vegetables are cooking, put the eggs, cream, salt and pepper into the jar of your Cuisinart® PowerEdge® 1.3 HP Blender. Add the cooked bacon/vegetable mixture. Auto Pulse on Low for 8 to 10 seconds, or until combined.
