Today, tea is the most consumed beverage in the world after water. Yet brewing tea is both an art and a science. Tea varieties are grown and produced in different environments and require specifi c water temperatures and controlled brew times to allow their unique fl avor and aroma to develop during brewing. Boiled water is not considered good for making many tea types as the boiling process removes oxygen, making the water stale. To bring out the optimal quality and taste of more delicate tea leaves such as green, oolong and white tea, a lower temperature will produce a better
flavored cup of tea while boiling water may scald the tea leaves and result in a
bitter, astringent brew. Similarly, brewing the tea for too long may result in a bitter, unpleasant brew, while brewing for too short a period may leave the tea weak and tasteless.
