3 egg whites
775g/1lb 11oz of icing sugar
1Add the three egg whites to the bowl
2Fit the beater. On speed 1 gradually add half of the icing sugar over a period of approximately 1min.
3Increase the speed to 2 and gradually add the remaining icing sugar over a period of approximately 1min.
4Once the ingredients have incorporated gradually increase the speed to “max” over a period of approximately 1min.
5Run for a further 45seconds on maximum speed.
