1. Beforethefirstuse, washyournewgriddleinhotsoapywater, rinseanddry. Then "condition"the surface by wiping on a thin coating of cookingoil or shortening. Removeexcess oil or shortening by wiping again with another paper towel. DO NOTuse cooking sprays on the griddle surface.

3.Placegriddleover grillelementso thatthe drainholesare infront. Thiswill permit excessgreaseto becollected in the grease container.
4.Preheatthe griddle as noted in the charts. Settings above 10 during griddle operations are unnecessaryand can ruin the finish.
5. Usenonmetallicspatulasorutensilswhile cookingto preventdamagingthe finish.
