SALAD DRESSINGS
MAYONNAISE
1 egg
2 TBL vinegar
1 tsp sugar
1⁄2tsp dry mustard
1⁄2tsp salt
1 cup salad oil - divided
Place egg, vinegar, sugar,
mustard, salt and 1⁄4cup of the
oil into blender. Cover and
BLEND until smooth, about
5 seconds. Without stopping
blender, remove lid insert and
gradually pour in remaining oil.
Stop blender when all oil has
been added. Makes 11⁄4cups.
SANTA FE DRESSING
1⁄2cup soy sauce
1⁄4cup lemon juice
1⁄4cup peanut oil
1⁄4cup olive oil
1 jalapeno pepper, cut into pieces
1⁄2cup cucumber, cut into pieces
1⁄2cup red onion, cut into pieces
8 cilantro sprigs
Place ingredients into blender
in order listed. Cover and
BLEND for 15-30 seconds or
until smooth. Makes 2 cups.
SPICY COTTAGE CHEESE
DRESSING
1⁄2cup salad oil
8 oz. tomato juice
1⁄2tsp Tabasco®pepper sauce
1 green onion, cut into pieces
1 cup cottage cheese
Place ingredients into blender
in order listed. Cover and
BLEND for 15-30 seconds or
until smooth. Makes 11⁄2cups.
HIDDEN VALLEY DRESSING
1⁄2cup milk
1 cup yogurt
1 pkg. (1.1 oz.) Original
Hidden Valley Ranch®dressing
1⁄2cup carrots, cut into pieces
1⁄2cup cucumber, cut into
pieces
Place ingredients into blender
in order listed. Cover and
BLEND for 15-30 seconds or
until smooth. Makes 11⁄2-2 cups.
