Sun-Dried Tomato and Basil Pesto

A twist on traditional pesto, the sun-dried tomato brings a welcome change to this popular sauce.

Makes about 5 cups

3cups extra virgin olive oil

8garlic cloves

4cups sun-dried tomatoes (packed in oil; drained) 1½ cups fresh basil leaves

¼ teaspoon freshly ground black pepper

cup grated Pecorino Romano

¾teaspoon sea salt

3 tablespoons white vinegar

Put all ingredients, in the order listed, into the jar of your Cuisinart® PowerEdge1000 Watt Blender. Run on High for 2½ minutes or until desired consistency is achieved.

Adjust seasonings to taste and serve.

Rémoulade

A traditional condiment in France, this version is best paired with pan-fried white fish.

¼cup water

¾teaspoon hot sauce

1½ tablespoons Worcestershire sauce

¾cup cornichons

1cup jarred roasted red peppers, drained and cut into 2-inch pieces

¼cup capers, drained 3¾ cups mayonnaise

Put all ingredients in the order listed, into the jar of your Cuisinart® PowerEdge1000 Watt Blender. Run on High for 40 seconds.

Adjust seasonings to taste and serve.

3 cups orange juice

3tablespoons reduced-sodium soy sauce 1½ tablespoons rice wine vinegar

3ounces fresh peeled ginger, cut into ½-inch pieces

6scallions, cut into 1-inch pieces

½teaspoon sea salt

3 tablespoons honey

Put all ingredients, in the order listed, into the jar of your Cuisinart® PowerEdge1000 Watt Blender. Run on High for 45 seconds.
