Kummelweck Rolls
Makes 10 Rolls
INGREDIENTS
Bread Dough:
1 cup water
3 tablespoons powdered milk
1 teaspoons kosher salt
1 tablespoon sugar
1 tablespoon melted butter
3 cups bread flour
2 teaspoons bread machine yeast
Kummelweck Seasoning:
1 tablespoon cornstarch 1/2 cup water
1/2 tablespoon pretzel salt 1/2 tablespoon caraway seeds
METHOD
1Place all of the ingredients for the bread dough in the bread pan in the order given except for the yeast.
2Make a well in the top of the dough using your finger and put the yeast in it. Insert bread pan into breadmaker; close lid.
3Press the dough only function.
4Once the dough is done, remove the dough from the breadmaker. Grease a 8x12 baking sheet. Place the rolls on the baking sheet. Using a pastry brush, brush rolls with melted butter. Let rolls rise until double in size, about 45 minutes.
5In a saucepan, combine water and cornstarch. Dissolve cornstarch over medium heat,
6Preheat oven to 375 degrees.
7Brush cornstarch mixture onto rolls using a pastry brush. Sprinkle with pretzel salt and caraway seeds. Bake at 375 degrees for 30 minutes.
