Basic Waffles

cups (500 ml) flour

tablespoons (30 ml) sugar

cup (80 ml) vegetable oil

tablespoon (15 ml) baking powder

teaspoon (5 ml) salt

 

 

Combine flour, sugar, baking powder, and salt. Stir together milk, oil, and eggs. Gradually add milk mixture to the dry ingredients. Stir until just blended. Pour batter onto waffle maker. Makes 412 cups (1.125 L) batter.

Blueberry Waffles: After pouring batter onto waffle grids, sprinkle fresh blueberries over batter then close lid. Do not stir berries into batter; this makes blue-gray waffles.

Best Buttermilk Waffles

cups (500 ml) flour

cups (500 ml) buttermilk

teaspoon (5 ml) baking soda

cup (125 ml) butter, melted

teaspoon (5 ml) vanilla

In a large bowl, mix together flour, sugar, baking soda, baking powder, and salt. Set aside. In a medium bowl, beat the egg whites until stiff, but not dry. In another bowl, whisk together egg yolks, buttermilk, butter, and vanilla. Pour into dry ingredients and stir briefly until just combined. Fold whites into batter. Pour batter onto waffle maker.

Makes 312 cups (875 ml) batter.

Weekend Waffles

cup (250 ml) flour

teaspoons (15 ml) baking powder

cup (250 ml) milk

teaspoon (1.25 ml) salt

tablespoons (60 ml) oil

tablespoon (15 ml) sugar

teaspoon (5 ml) vanilla

In a large bowl, whisk together flour, baking powder, salt, and sugar. Set aside. Beat egg whites until stiff. Add milk and egg yolks to flour mixture. Stir until smooth. Add oil and vanilla to batter and mix well. Fold egg whites into the batter. Pour batter onto waffle maker. Makes 312 cups (875 ml) batter.
