CONSEJOS PARA LA COMPRA, CONSERVACIÓN Y MANIPULACIÓN DE ALIMENTOS

TEMPERATURA

El refrigerador debe mantenerse dentro de los límites de 34° F (1° C) - 38° F (3° C) según sea su preferencia.

El compartimiento del congelador debe mantenerse a 0° F (-18° C) o menos.

El mejor enfriamiento se logra cuando el aire circula libremente alrededor de los alimentos. No llene demasiado las parrillas del refrigerador.

HUEVOS Y

PRODUCTOS

LÁCTEOS

Guarde los huevos en la parrilla del refrige- rador en la caja de cartón original.

Mantenga los huevos refrigerados enteros hasta que estén listos para usarlos. No los deje que se calienten a temperatura ambiente antes de cocinarlos.

No use huevos que estén quebrados.

No compre huevos que estén siendo vendidos de un estante y que no estén refrigerados.

Verifique las fechas de frescura impresas en los envases de los productos lácteos.

Refrigere los productos lácteos inmediatamente después de comprarlos y después de cada uso.

Cierre herméticamente las cajas de cartón después de usar para evitar que penetre aire y olores de otros alimentos.

Ocasionalmente se producirá moho en la superficie de los quesos duros (Suizo, Cheddar, Parmesano, etc.). Recorte por lo menos una pulgada alrededor y debajo del área afectada, manteniendo el cuchillo alejado del moho mismo.

Si el queso suave, el requesón, las rebanadas de queso u otros alimentos con queso desarrollan moho no los guarde, descártelos.

CARNES FRESCAS

DE VACUNO Y DE

AVE

Deje la carne de vacuno y de ave en sus envases originales antes de usar (la manipulación continua puede introducir bacterias en el producto).

Guarde algunas carnes crudas en paquetes sellados para evitar escapes y posible contami- nación con otros alimentos y superficies.

Si no va a congelar las carnes frescas, guárdelas en la gaveta ClimateZone™ y use el ajuste ‘Meats’ (Carnes).

Verifique y observe todas las fechas de expiración de los artículos deteriorables que sean precocinados o listos para servir.

SOBRAS

Refrigere o congele las sobras inmediatamente. Nunca se deben dejar los alimentos deteriorables fuera del refrigerador a temperatura ambiente por más de 2 horas.

Guarde las sobras en contenedores limpios, no hondos y herméticamente sellados. El núcleo de los pedazos de carne grandes y densos o las ollas de sopas y estofados hondas se demoran más en llegar a una temperatura de conservación segura. En los contenedores bajos los alimentos se enfrían bien más rápidamente. Corte los pedazos de carne en rebanadas de 3 pulgadas (8 cm) o menos y deshuese la carne de ave antes de refrigerarla. Divida las sopas y estofados en contenedores más pequeños.

Cuando vuelva a usar las sobras, caliéntelas bien. Caliente las salsas y sopas rápidamente y déjelas hervir por lo menos durante un minuto. Caliente las otras sobras a 165° F (74° C).

FRUTAS Y

VERDURAS FRESCAS

Guarde en la gaveta ClimateZone™ en el ajuste apropiado (Productos Agrícolas o Cítricos, ver página 60).

Separe los productos agrícolas frescos antes de guardarlos y use primero los que estén magullados o suaves. Descarte aquellos que muestran señales de deterioro.

Manipule con cuidado los productos agrícolas frescos. Aún una pequeña magulladura puede provocar deterioro y causar pérdida prematura de la calidad.

Envuelva los alimentos que producen olor tales como las cebollas y el repollo.

No corte ni lave la frutas y verduras frescas hasta que no estén listas para ser usadas. El lavado puede quitar la protección natural y al cortarlas se inicia la fermentación. Ambos factores pueden tener un efecto negativo en la duración de los productos.

Lave todas las frutas y verduras frescas al momento de usarlas, aún aquellas que tienen cáscara que no va a ser comida. Esto evita que penetren bacterias del exterior al interior comestible durante el corte.

CONGELADOS

No vuelva a congelar los artículos que se hayan descongelado completamente.

El congelador funcionará mejor cuando esté lleno de alimentos. Si no hay suficientes alimentos para llenar por lo menos 2⁄3 del congelador, use bolsas de hielo o cajas de cartón de leche llenas con agua para que el congelador quede lleno hasta tal capacidad.
