4. LOAD HOT FOODS INTO THE APPLIAN CE After preheatin g, place hot foods into the prehea ted pan s located in the appliance or exchange the pans with pre-f ill ed prod uct pans . This applian ce is designe d for the purpose of hot food hold ing. Only hot foo ds should be place d into the unit. All pan div ider bars require d must be util ized at all time s with the pan configu ration chosen. Before loa ding food into the unit, use a

pocket -ty pe the rmometer to make certain all product s have reached an internal tem perat ure of 140° to 180° F (60° to 82°C). If any food product is not at proper serving tempera ture, use a Halo Heat cooking and holding oven , set at 250° to 275 °F (121° to 135°C), or a Combither m oven to bring the produc t within the correct temper ature rang e.

5. RESET THE RMOSTAT(S) AS NEEDED

After all produ cts are loaded into the unit, it is
