In surfacecooking,the use of cookwareextendingmorethan l-inchbeyondedgeof cooking element’strim ringis not recommended.However,when canningwith water-bathor pressurecanner,larger-diameter cookwaremaybe used. Thisis becauseboilingwatertemperatures (evenunderpressure)are not harmfulto cooktopsurfaces surroundingthe cookingelement.

Whencanningfoodsin a waterbath canner,a gentlebut steadyboil mustbe maintainedcontinuously forthe requiredtime.When canningfoodsin a pressurecanner, thepressuremustbe maintained continuouslyfor therequiredtime.
