Estofado de buey y cebada

750 g de estofado de buey partido en trozos de 1,5 cm

½taza de cebolla picada 2 cucharadas de harina

1 cucharada de salsa Worcestershire

1 bote (unos 400 g) de caldo de buey

2 zanahorias medianas, cortadas en rodajas de 1 cm (aprox. 1 taza)

½taza de cebada

1 hoja de laurel

¼ de cucharadita de pimienta

1 paquete (unos 275 g) de guisantes congelados, previamente descongelados

1.En una cacerola de 2,25 litros poner el buey, la cebolla, la harina y la salsa Worcestershire; mezclar bien. Cubrir con una tapa. Cocer a potencia alta durante 6 a 8 minutos hasta que el buey pierda el color rosa, removiendo una vez.

2.Mezclar con el caldo de buey, las zanahorias, la cebada, el laurel y la pimienta. Cubrir con una tapa. Cocer a potencia media durante 45 a 50 minutos, hasta que el buey y las zanahorias estén tiernos, removiendo dos o tres veces.

3.Añadir los guisantes. Cubrir con una tapa. Cocer a potencia media durante 10 minutos. Dejar reposar durante 10 minutos más. Retirar el laurel antes de servir. Salen seis raciones.

Cazuela de brócoli y queso

¼de taza de mantequilla o margarina

¼de taza de cebolla picada

1½ cucharadas de harina

½ cucharadita de sal

¼ de cucharadita de mostaza en polvo 1/8 de cucharadita de pimienta

1½ tazas de leche

¼ de taza de pimiento rojo picado

225 g (2 tazas) de queso cheddar cortado a pedacitos

1 paquete (unos 275 g) de brócoli troceada congelada, previamente descongelada

4 tazas de espirales de pasta cocidas (225 g en seco)

1.En una cacerola de 2,25 litros, cocer la cebolla y la mantequilla a potencia alta durante 2 o 3 minutos, hasta que la cebolla esté tierna, removiendo una vez.

2.Añadir la harina, la sal, la mostaza y la pimienta; mezclar bien. Cocer a potencia alta durante 60 a 90 segundos, hasta que la mezcla comience a hervir. Añadir la leche y remover hasta formar una masa fina.

3.Añadir el pimiento rojo. Cocer a potencia alta durante 2 a 3 minutos hasta que la mezcla hierva y espese ligeramente, removiendo dos veces. Añadir el queso y remover hasta que se funda.

4.Agregar el brócoli y la pasta; mezclar bien. Cubrir con una tapa. Cocer a potencia alta durante 4 a 6 minutos hasta que se caliente por completo, removiendo una vez. Remover antes de servir.
