Ensalada templada de patatas

500 g de patatas rojas pequeñas partidas en trozos de 1,5 cm

4 lonchas de panceta (cruda) partidas en trozos de 1,5 cm

¼de taza de cebolla picada 2 cucharaditas de azúcar 1 cucharadita de sal

1 cucharadita de harina

½ cucharadita de semillas de apio

1/8 de cucharadita de pimienta

2½ cucharadas de vinagre de sidra

1.En una cacerola de 2,25 litros poner las patatas junto con ¼ de taza de agua. Cubrir con una tapa. Cocer a potencia alta hasta que las patatas estén tiernas (10-12 min); remover dos veces. Escurrir y reservar hasta que se enfríen ligeramente.

2.En un cuenco mediano, cocer la panceta a potencia alta hasta que esté crujiente (3-5 min); remover una vez. Colocar la panceta sobre papel absorbente. Reservar 1 cucharada de la grasa.

3.Mezclar la grasa con la cebolla. Cubrir con envoltura de plástico; destapar una esquina para que se escape el vapor. Cocer a potencia alta hasta que esté tierna (3-4 min); remover una vez.

4.Mezclar el azúcar, la sal, la harina, las semillas de apio y la pimienta. Cocer a potencia alta hasta que la mezcla hierva (30-40 s). Añadir el vinagre y ½ taza de agua. Cocer a potencia alta hasta que la mezcla hierva y espese ligeramente (1-2 min); remover una vez. Agregar la panceta. Verter la mezcla sobre las patatas. Remover bien.

Salen seis raciones.

Sopa de judías negras

1 taza de cebolla picada

1 diente de ajo picado

2 botes (425 g cada uno) de judías negras escurridas

1 lata (400-450 g) de tomates dulces picados

1 bote (unos 400 g) de caldo de pollo

1 lata (200-250 g) de maíz

1 lata (100 g) de chilis verdes picados

1-3 cucharaditas de comino molido, o según el gusto

1.Poner la cebolla y el ajo en una cacerola de 3,5 litros. Cubrir con una tapa. Cocer a potencia alta durante 3 a 5 minutos, hasta que estén tiernos.

2.Añadir uno de los botes de judías; machacar las judías con un tenedor. Agregar los restantes ingredientes; mezclar bien.

3.Cocer, sin cubrir, a potencia alta durante 10 minutos; remover. Reducir a potencia media y cocer otros 5 minutos. Remover antes de servir. Salen unos dos litros.
