Cheese and Bacon BBQ Rolls

Makes 6 rolls

375mls warm water
60ml olive oil
1 teaspoon sugar
1 teaspoon salt
600g bread flour
2 teaspoons yeast
3 tablespoons bbq sauce
1 cup bacon, diced
1 cup tasty cheese, grated
1. Place water, olive oil, sugar, salt, flour
and yeast into mixing b owl with dough
hooks and knead for 3 mi nutes. Shape
into a ball and place in a l arge clean
glass bowl. Brus h with a little water
and cover with a damp tea towel.
Place in a warm, draug ht-free place
to prove for 1½hours or until double d
in size.
2. Preh eat a fan forced oven to 180°C.
3. Pla ce dough ball back i nto mixing
bowl and knead for a fur ther 2
minutes. Roll doug h ball out onto a
floured surface an d cut into 6 balls.
4. Pla ce the 6 dough balls o nto a baking
tray lined with baki ng paper. Top
each evenly with bbq sa uce, bacon
and cheese.
5. Pla ce into the oven and cook for
20 minutes.

Pancakes

Makes 12 pa ncakes

2 cups self-raising flour
13 cup plain flour
3 tablespoons caster sugar
2¼ cups milk
90g butter, melted
1 x 59g egg, lightly whisked
40g butter, extra
1. Place the flour and sugar into the
mixing bowl with the b eaters and mix
well. Make a well in the cent re and
add the milk, but ter and eggs. Whis k
mixture until sm ooth and lump free.
2. Br ush a frypan with s ome of the extra
butter and then he at on a low to
medium heat until b utter sizzles .
3. Pou r about 13 cup of mixture i nto the
pan and evenly move mixt ure around
to form a circle.
4. When bubbles cover the whole
pancake, flip the pan cake and cook
for a further 1 minu te.
5. Rep eat until all pancake b atter is
gone. Serve with lemon and sugar or
maple syrup and ic e cream.
