1cup heavy cream
2tablespoons unsweetened cocoa powder
1⁄4 cup powdered sugar
1⁄4 teaspoon vanilla
1⁄4 teaspoon rum extract
Attach pro whisk to mixer. Place cream and cocoa powder in medium bowl. Beat on Speed 2 about
30 seconds, or until blended. Beat on Speed 7 about 30 seconds, or until soft peaks form. Continuing on Speed 7, gradually add powdered sugar, vanilla, and rum extract. Beat about 30 seconds, or until stiff.
Yield: 16 servings (2 tablespoons per serving).
