The MIN and MAX markings inside the pan are for oil used in the Deep Fryer mode only.

The racks allow air to circulate under the food for even cooking, and allows food to sit above fats and juices which may accumulate at the bottom of the pan. The high rack

is suitable for steaming. The low rack is suitable for roasting.
