BAKE (Natural Airflow Bake)

Use this setting for baking, roasting, and casseroles.

CONVECTION BAKE

Use this setting to bake and roast foods at the same time with minimal
taste transfer.

BROIL (Infrared Broil)

Use this setting for broiling dark meats at 1” thickness or less where
rare or medium doneness is desired.

CONVECTION BROIL (Infrared Convection Broil)

Use this setting to broil thick cuts of meat.

Convection Dehydrate (CONVECTION BAKE)

Use this function to dehydrate fruits and vegetables.

Convection Defrost (CONVECTION BAKE)

Use this function to defrost foods.

LightingBurners

All burnersare ignited by electricignition. Thereare
no open-flame,“standing”pilots.

Surface Burners-AutomaticReignition

Tolight the surfaceburners, push and turn the
appropriatecontrol knobcounter clockwise toany position.
Thiscontrol is both a gas valveand an electric switch.Burners will ignite
at any“ON” position with the automaticre-ignitionsystem. If the flame
goesout for any reason, the burnerswill automaticallyreignite if the gas
is stillflowing. When gas is permittedto flow to the burners,the electric
ignitersstart sparking. Onall surface igniters youshould hear a “clicking”
sound.If you do not, turn off the controland check that theunit is
pluggedin and that the fuse or circuitbreaker is not blownor tripped.
Withina few moments, enough gaswill have traveled to theburner to
light.When the burner lights,turn the burner control toany position to
adjustthe flame size. Settingthe proper flame heightfor the desired
cookingprocess and selectingthe correct cookingvessel will resultin
superiorcooking performance,while also saving timeand energy.

Vari-Simmer™

Simmeringis a cooking techniquein which foods are cookedin hot
liquidskept at or just barelybelow the boiling pointof water. Simmering
ensuresgentler treatmentthan boiling to preventfood from toughening
and/orbreaking up. The sizeof the pan and the volume of foodcan have
a significanteffect on how highor low a flame is needed forsimmering.
For thisreason, Viking rangeand rangetop burners areengineered with a
Vari-Simmer setting.The Vari-Simmersetting is not just one simmer
setting,but provides a variablerange of simmer settings.This variable
rangeof simmer settings allowsyou to adjust the flameheight to achieve
the bestsimmer depending on thetype and quantity of foodbeing
simmered.It is this abilitythat makes the Vari-Simmersetting the most
accurateand trustworthy simmeron the market.
