￿WARNING: Follow all safety instructions provided with your barbecue.

￿WARNING: Do not drop the cast iron griddle— it will break.

￿WARNING: Do not use two griddles in your gas grill.

Prior to first use:

Wash thoroughly with a mild dishwashing liquid to remove the protective wax coating.

First time use:

Rinse with warm water and dry completely with a soft cloth or paper towel.

DO NOT ALLOW THE GRIDDLE TO AIR DRY. NEVER WASH IN A DISHWASHER.

How to use:

Look for the edge of the griddle that has two flat metal tabs, called spacers (see ill. a).

Lay the griddle directly on the cooking grate with spacers facing the lid hinges (The spacers enable proper lid closing).

How to remove:

Turn off grill burner(s) before attempting to remove a hot griddle.

A hole and notch on either side of the griddle is designed for the insertion of the steel lift-handles (see ill. b). To insert the handles, place the hook of the handle under and then thru the hole (see ill. c).

Carefully lift the griddle off of the cooking grate taking care not to spill meat juices or sauces onto the hot cooking grate, burner or one’s self (see ill. d).

Tips:

Since cast iron holds heat well, you will not need to use extremely high cooking temperatures. Best results are obtained with medium to medium-high heat. Do not overheat.

Maintenance:

Brush debris off with a steel bristled wire brush.
