Panes de maíz (“Johnnycakes”)

11⁄2 tazas harina de maíz molida a la	1 cucharadita azúcar
manera tradicional	21⁄2 tazas de agua hirviendo
1 cucharadita sal

Precaliente la plancha a 325ºF. Combine la harina de maíz, sal y azúcar en un tazón grande. Agregue lentamente el agua hirviendo en el tazón, revolviendo constantemente. Deje descansar la masa por 10 minutos. La masa deberá estar espesa pero no demasiado consistente. Vierta a cucharadas grandes de 1⁄4 taza en la plancha. Los panes deberán ser espesos (más o menos 3⁄4 pulg.) y no más de 3 pulgadas de diámetro. Cocine hasta que el lado que está abajo quede dorado, de 6 a 11 minutos. Dé vuelta los panes y continúe cocinando por otros 6 a 11 minutos.

Se obtienen unos 10 panes.
