Temperature Settings
.Foods of different densities may require a higher or lower amount of heat to keep the food at the desired temperature. For example, ground beef will need a higher temperature setting to keep warm than will a marina sauce.
.To eliminate the risk of spoiling or food borne illnesses, all hot and/or warm foods should be maintained at 140°F or above.
.To maintain the minimal temperature of 140°F, use a food thermometer and adjust the settings on the temperature control dial as needed.
.Check the temperature of the food with a food thermometer periodically, especially if the food will be remaining in the buffet server for an extended period of time.
