Recipes

Parmesan Yogurt Chicken

split chicken breasts, skin removed

cup plain yogurt

cup thinly sliced green onions (about 4)

Salt and pepper to taste

1/2 cup grated Parmesan cheese

cup seasoned bread crumbs

 

 

1.Preheat Dining-In™ Convection Counter Top Oven/Broiler at 400˚F (204˚C) for 10 minutes.

2.Sprinkle chicken pieces with lemon juice. Season with salt and pepper. Dredge in bread crumbs. Arrange in oven pan, meaty side up. Sprinkle any leftover bread crumbs on top.

3.Bake at 400˚F (204˚C) for 45 minutes. Meanwhile, combine yogurt, mustard and green onions. Stir to blend.

4.Drizzle yogurt mixture over chicken pieces. Return to oven and bake 15 minutes more. Sprinkle Parmesan cheese over chicken and broil until cheese melts and browns slightly, about 4 to 5 minutes.

5.Serve immediately.
