Salsa Chicken
11/4 oz dry taco seasoning
1lb boneless chicken breast thin strips
6oz pkg yellow rice mix with seasoning
packet 21/2 c hot water
21/2 c frozen peas
1 c canned corn
1/2 c apricot preserves
141/2 oz can diced tomatoes
Seafood Pasta
8 - 9 oz fresh tortellini
2 c water
13/4 c creamy Alfredo sauce
11/4 lb raw shellfish like shrimp, scallops, crab
3c thinly sliced fresh vegetables like carrots, mushrooms, green beans
Garnish: 1/3 c grated Parmesan cheese
Beef Burgundy
11/2 lb
2slices of bacon, minced
1large onion, chopped
3cloves garlic, minced 21/2 c carrots
1tsp salt 1/2 tsp pepper
1tsp thyme
2tsp rosemary
1c red wine
1c beef bouillon
2c sliced mushrooms
2c pearl onions
Sweet & Sour Pork
1c long grain rice
2c pineapple juice 1/2 c water
1/4 c sweet & sour sauce
2tbsp soy sauce
1tbsp minced fresh ginger 1/4 c honey
11/4 lb boneless pork loin, cut into thin strips
20oz can pineapple chunks, drained

14oz can artichoke hearts, drain & quarter
3oz pitted ripe olives, cut in half
