1medium zucchini, cut into 1-inch cubes

1medium red pepper, cut into 1/2-inch cubes

1medium green pepper, cut into 1/2-inch cubes

1medium onion, cut into 1/2-inch cubes

2tbsp curry powder

1tsp ground cumin

15oz can garbanzo beans, rinsed and drained 141/2 oz can diced tomatoes

15oz can crushed tomatoes

1tsp salt

4c vegetable or chicken broth

Meat Sauce

1 lb ground beef

1/2 lb sweet Italian sausage

8oz chopped, canned mushrooms, drained

1medium onion, minced

2cloves garlic, minced

1stalk celery, minced

1carrot, minced

1/2 c red wine

1/2 c water

28oz can tomato puree

6oz can tomato paste

1tsp sugar

1tsp dried basil

1tsp oregano

1/4 tsp crushed red pepper

1 tsp salt

1/4 tsp pepper

2 tbsp olive oil

2large onions, chopped finely

3cloves garlic, minced

8oz bottle clam juice 21/2 c dry white wine

141/2 oz can diced tomatoes

21/2 c finely chopped fennel

3/4 c instant rice

3tbsp chopped parsley

1bay leaf

1tsp dried thyme

1/2 tsp ground pepper

8oz boneless white fish, cut into 4 pieces

8oz scallops

8oz shrimp, peeled and deveined

Split Pea

3 c water

3c vegetable bouillon

1c dried split peas

1/2 c chopped onion

1clove garlic, minced 1/2 tsp dried marjoram

1/2 tsp dried thyme leaves

1bay leaf

1/8 tsp cayenne pepper

1c sliced carrots

1c diced potatoes 1/2 c sliced celery

Vegetarian Chili

1c sliced carrots

1c sliced celery

1/2 c chopped red pepper

1/2 c chopped green pepper

1/2 c sliced green beans

1large onion, minced

2cloves garlic, minced

28oz can crushed tomatoes

19oz can kidney beans, rinsed and drained

19oz can black beans, rinsed and drained

11/2 c water

1/2 c barley

2tbsp chili powder

1tsp cumin

2tsp Italian seasoning

1tsp salt

1/4 tsp pepper

Garnish: Parmesan cheese or sour cream
