Parsley Potatoes
5 red potatoes, about 11⁄2 pounds | 1⁄4 | teaspoon salt |
1 tablespoon vegetable oil | 1⁄4 | teaspoon pepper |
1 tablespoon minced fresh parsley |

Scrub potatoes and cut each into 6 wedges. Place in a bowl. Drizzle with oil. Sprinkle with parsley and seasonings. Stir to mix. Pour into baking pan. Bake at 400ºF for 35 minutes or until fork tender. Makes 4 servings.
