OPERATION

Befor e Initia l Use:

Clea n appliance wit h a clean, damp cloth and mild soap sol ution. Clean and install the pans, shelve s and side racks.

1.Tur n therm ostat to 200° F (93°C ) and preheat for 30 min utes .

When the thermostat is turned clockwise to an "ON" position, the indicator light will illu minate and wil l remain lit as lon g as the unit is calling for hea t. Close the ventilation openings inside the door to accelera te heating.

The indicator light will go OUT whe n the air temp erature inside the unit rea ches the temp erature set by the operator. It wil l then cycl e “ON /OFF ” at this holdi ng point. Veri fy the full preheat ed tempera ture with the holding temp erature gaug e located on the control panel of the cabin et.

2.Load the cabinet with hot food only.

The pur pose of the holding cabinet is to main - tai n hot food at pro per servi ng tempe rature. Befo re load ing the cabinet with foo d, use a food therm ome ter to mak e cert ain all pro ducts are at an inte rnal temperat ure range of 140° to 160°F (60 ° to 71° C). Any food prod uct not within the prope r temperatu re range should be heated befor e loa ding int o the hold ing cab inet.

Some food s (ribs, fis h, potatoes, etc.) will create humidity inside the warme r. Allo w the surface of these foods to stabili ze for a short period of time before placi ng the warm food insid e the unit. Do not add water to the unit.

3.Res et the thermos tat to 160 °F (71°C). For pota toes - 180°F (82°C ).

Check to make cer tain the cabinet doo r is secu rel y closed, and res et the ther mos tat to 160°F (71°C). THIS WILL NOT NEC ESSARI LY BE THE FINAL SETTING. The prop er temper a- tur e range for the produc ts being held will dep end on the type and quanti ty of produc t. When holding food for prol onged per iods, it is advisable to periodically check the inter nal tem - perature of each item with a food thermo meter to assu re maintena nce of the proper temper ature range of 140° to 160°F (60° to 71°C).

Ver ify that the fan in the back of the unit is opera ting and tur ning without any visu al rest ricti ons.
