Marinated New Yorkcut steak

4New York cut steaks – cut 3cm thick
1cup red wine
2tablespoons olive oil
1tablespoon Dijon style mustard
1teaspoon commercially prepared minced garlic
PreheatIkon Grilluntil thegreen ‘Ready’
lightilluminates.
1. Combine wine, oil, mustard and garlic ina
screwtop jarand shakewell. Place steaks
ina shallow dish, not plastic or aluminium,
andpour over marinade.
2. Allow to marinate at room temperature for 30
minutesto 1 hour.
3. Remove steaks from marinade and place on grill.
Cookfor 3 minutes for medium rare.
Serve with creamy mashed potato and a crisp salad.

Atlantic salmon steak with

tarragon and pepper crust

4Atlantic salmon steaks
–weighing approx 180g each
2tablespoons olive oil
2tablespoons dried tarragon leaves
freshlyground black pepper
Togarnish;
Limeor lemon wedges
Toserve;
Shoestring fries or steamed baby potatoes
PreheatIkon Grilluntil thegreen ‘Ready’
lightilluminates.
1. Combine oil with tarragon and a generous and
coarsegrinding of black pepper.
2. Brush salmon on both sides with mixture and
placeon grill.
3. The grilling height control to be adjusted too just
touchthe top of the fish steak.
4. Allow to cook for 2 minutes for fish to be golden
onthe outside and ‘rosy’ pink on the inside. Cook
alittle longer if you prefer your fish more cooked.
5. Remove from grill and serve immediately.
