Panecillos anaranjados

21⁄4 tazas de harina

1 taza de azúcar

3⁄4 cucharadita de polvo para hornear

1⁄2 cucharadita de bicarbonato

1⁄2 cucharadita de sal

1⁄2 taza de mantequilla

1 recipiente de 8 onzas de yogurt natural

3 claras de huevo Pulpa de 2 naranjas

2 cucharadas y 1 cucharadita de jugo de naranja

Mezcle la harina, el azúcar, el polvo para hornear, el bicarbonato y la sal en un recip- iente. Agregue la mantequilla y mezcle hasta tener una mezcla gruesa. Agregue el yogurt, las claras de huevo, la pulpa y el jugo de naranja y agite hasta quedar húmedo. Vierta en recipientes para panecillos, engrasados o cubiertos de papel. Hornee a 350ºF durante 20 a 25 minutos.

Pastel (queque) de manzana revuelta

3 cucharadas de mantequilla, derretida

3⁄4 taza de azúcar moreno, comprimido

2 tazas de pulpa de manzana

3 cucharadas de mantequilla, ablandada

1⁄2 taza de azúcar

1 huevo

1⁄2 cucharadita de vainilla

1 taza de harina

11⁄2 cucharaditas de polvo para hornear

1⁄2 cucharadita de sal

1⁄4 taza de leche

Mezcle la mantequilla y el azúcar moreno y aplástelos en un molde para queques de 8 pulgadas de diámetro. Reparta la pulpa de manzana encima de la corteza de azúcar moreno; apártela. En un recipiente, mezcle la mantequilla y el azúcar hasta que esté mezclado. Agregue el huevo y la vainilla, mezcle bien. Agregue harina, polvo para horn- ear, sal y leche; mezcle bien. Vierta encima de la pulpa de manzana. Hornee a 350ºF durante 30 minutos. Invierta

el queque sobre un plato para servir. Sírvalo caliente y agregue crema chantilly encima.

Pastel (queque) de zanahoria

5 a 8 zanahorias, o suficientes para producir 11⁄2 taza de pulpa de zanahoria y 1⁄2 taza de jugo de zanahoria

1 taza de harina

11⁄2 cucharaditas de polvo de hornear (levadura en polvo)

1⁄2 cucharadita de canela

1⁄2 cucharadita de sal

2 huevos

1 taza de azúcar granulada

3⁄4 de taza de aceite para ensaladas

2 cucharaditas de vainilla

1⁄2 taza de nueces picadas Azúcar de repostería

Precaliente el horno a 350ºF. Procese las zanahorias en el extractor de jugo. Mida y aparte 11⁄2 tazas de pulpa y 1⁄2 taza de jugo. Mezcle la harina, polvo de hornear, canela y sal, apártelas. Combine los huevos, el azúcar y el aceite en un recipi- ente mediano. Agregue la mezcla de harina alternando con la pulpa y el jugo de zanahoria. Agregue la vainilla y las nueces picadas; mezcle todo. Coloque en un molde para hornear de 9 pulgadas bien engrasado; hornéelo por 35 a 40 minutos. Cuando se enfríe el pastel espolvoréelo con azúcar de repostería.
