1 lb. (450 g) de lentejas marrones, bien enjuagadas y escurridas 2 latas de 14 oz. (400 g) de tomates en cubos con jugo

3 latas de 15 oz. (425 ml) de caldo de pollo 1 cebolla grande, pelada, picada

4 dientes de ajo, pelados, picados

3 zanahorias, peladas, rebanadas

6 ramitas de tomillo fresco

1 lata de 14 oz. (400 g) de garbanzos, enjuagados y escurridos 1 chorizo de 12 oz. (300 g) rebanado

Jugo fresco de 1/2 lima

1/2 a 1-1/2 cucharada (2,5-7,5 ml) de cayena molida Sal y pimienta fresca molida a gusto

Perejil fresco para decoración

Mezcle las lentejas, zanahorias, tomates, 2 latas de caldo de pollo, cebolla, ajo y ramitas de tomillo en el recipiente de cerámica. Cocine en BAJA durante 6 horas, o en ALTA durante 4 horas hasta que las lentejas estén tiernas. Quite las ramitas de tomillo. Agregue los garbanzos, chorizo, 1 lata de caldo de pollo y la cayena molida. Cocine en BAJA por aproximadamente 2 horas o en ALTA por 1 hora más. Justo antes de servir, mezcle con el jugo de lima y condimente a gusto con sal y pimienta recién molida. 4-6 porciones.

Albóndigas con Salsa Barbacoa

1 paquete de albóndigas congeladas de 80 oz. (2,28 kg)

2 cebollas medianas, picadas

3/4 taza (175 ml) de pedazos de panceta verdadera 1 frasco de 18 oz. (500 ml) de salsa barbacoa Queso Monterey Jack rallado para servir

Mezcle la cebolla picada, salsa barbacoa y pedazos de panceta en el recipiente de cerámica. Agregue las albóndigas congeladas a la salsa y mezcle. Cocine en ALTA durante 3 horas*. Si lo desea, coloque queso rallado y sirva. 10-12 porciones.
