Funzionamento del forno a microonde

Le microonde sono onde elettromagnetiche ad alta frequenza. L’energia da esse sviluppata consente di riscaldare o cuocere gli alimenti senza modificarne la forma o il colore.

E' possibile utilizzare il forno a microonde per:

•Scongelare

•Cuocere

Principi di cottura

1.Le microonde generate dal magnetron

vengono rilasciate uniformemente attraverso il sistema di distribuzione. Ciò permette di cuocere gli alimenti in modo uniforme.

2.Le microonde vengono assorbite dagli

alimenti fino a una profondità di circa 2,5 cm. La cottura continua man mano che il calore si disperde all’interno degli alimenti.

3. Il tempo di cottura varia a seconda del contenitore utilizzato e delle proprietà degli alimenti:

•Quantità e densità

•Contenuto di acqua

•Temperatura iniziale (refrigerato o meno)

Importante: Poiché la parte centrale degli alimenti viene cotta per dispersione di calore, la cottura continua anche quando gli alimenti vengono estratti dal forno.

I tempi di riposo specificati nelle ricette e in questo manuale devono essere quindi osservati al fine di garantire:

•Una cottura uniforme degli alimenti, anche nella parte centrale

•Una temperatura uniforme in ogni parte dell’alimento
