| To make the pastry, put the flour, butter and eggs | |

| in a bowl and mix to a soften pastry and then | |

| rest it in the refrigerator for 30 mins. Roll out the | |

| pastry and place in buttered metal tins (like muffin | |
|
|
| mould for 6 mini quiches). Mix the cream, cubed | |
|
|
| bacon, cream fraiche, egg, cheese, salt, pepper and | |
|
|
| pour the mixture into the moulds. Put them on the | |
|
|
| low rack. After cooking, stand for 5 minutes. | |
|
