MARINADES
Here are two marinades that can be used to flavour and tenderise 500g meat (beef, lamb, pork, poultry and seafood).
Island Style Marinade
½cup hoisin sauce ¼ cup tomato sauce 2 tablespoons honey
2 tablespoons soy sauce
¼ teaspoon cracked black pepper 2 tablespoons chopped chives
1 red chilli, chopped (optional)
Italian Style Marinade
½ cup white wine
2 tablespoons olive oil ¼ cup lemon juice
1 tablespoon dry mixed herbs
1 garlic clove, peeled and sliced
1.Combine all marinade ingredients together in a bowl, mix well.
