Date and Walnut Loaf
Serves: 8 - 10
Cooking:
½teaspoon bicarbonate of soda 125g butter, softened
½cup brown sugar
¼cup honey 2 eggs

1 cup walnuts, chopped
1.Preheat oven to moderately slow (170°C/150°C
2.Combine dates, water and bicarbonate of soda in a bowl. Stand for 10 minutes for dates to soften.
3.Place butter, sugar and honey in a bowl. Using the beaters, beat on speed
4.Add eggs one at a time, beating well after each addition. Stir in flour, walnuts and date mixture.

Banana Bread
Serves: 8 - 10

100g butter, softened
¾cup brown sugar 2 eggs
1 ½ cups wholemeal
1 teaspoon ground cinnamon
1 ½ cups mashed banana
½cup buttermilk
1.Preheat oven to moderate (180°C/160°C
2.Place butter and sugar in a bowl. Using the beaters, beat on speed
3.Add eggs one at a time, beating well after each addition. Stir in flour, cinnamon, banana and buttermilk.
4.Spoon mixture into pan. Bake for about
1 hour or until a skewer inserted into the centre comes out clean. Stand cake for 5 minutes then turn onto a wire rack to cool. Serve.
