FRESH TOMATO SALSA

6 large vine-ripened plum tomatoes, coarsely chopped

4 scallions, white and green parts sliced thin

1 small jalapeño pepper, finely chopped

2 tablespoons finely chopped cilantro juice of 1 lime

salt

black pepper

1.Combine first 5 ingredients together and season with salt and black pepper to taste.

2.Let stand 15 to 30 minutes before serving.

Makes 1-1/2 to 2 cups
