Preheat oven if called for in recipe.

Refer to a reliable cookbook for recom- mended pan type and size.

Allow 1’55to 2 inches (4-5 cm) on all sides of the pans for air circulation. There must be a minimum space of 1 inch (2.5 cm).

Use cooking utensils with smooth, flat bottoms that fit the surface units being used.
