Boulettes de viande de Mica

INGRÉDIENTS

Environ 25 boulettes ou 1 pain de viande de 9 x 5 x 3 po

½ tasse de parmesan râpé

1 oignon moyen, coupé en quartiers ½ tasse de persil italien (½ bouquet)

2 tranches de pain rassis, coupées en quatre 1 lb de boeuf désossé, coupé en cubes de 1 po 1 lb de porc désossé, coupé en cubes de 1 po

¼tasse de lait écrémé en poudre

½c. à thé de graines de fenouil

1 c. à thé de basilic

1 c. à thé d’épices italiennes 1½ c. à thé de sel

¼c. à thé de poivre moulu

2 gros oeufs

¼tasse d’eau glacée

PRÉPARATION

1.Râper finement le fromage parmesan à l’aide d’une râpe à fromage et réserver.

2.Assembler la lame S BladeMC dans le Sous ChefMC de Breville.

3.Placer l’oignon, le persil, le pain, la viande, le lait en poudre, le fromage râpé et les épices italiennes dans le bol du robot. Pulser 4 à 6 fois, puis transformer jusqu’à finement haché.

4.Ajouter les oeufs et l’eau et pulser pour bien mélanger, en évitant de trop transformer.

5.Façonner le mélange en boulettes, 2 c. à soupe chacune.

6.Disposer en une seule couche dans un plat de cuisson et cuire au four à 375°F (190°C) pendant 25 minutes.

Servir seul ou accompagné de sauce tomate.

Sauce pour Pain de viande de Mica

INGRÉDIENTS

1 bte de 6oz de pâte de tomate

1 tasse de ketchup

¼ tasse de bouillon de boeuf

3 c. à soupe de vinaigre balsamique

3 c. à soupe de sucre brun

2 c. à soupe de moutarde de Dijon

2 c. à thé de sauce Worcestershire

PRÉPARATION

Pour faire le pain de viande: Omettre l’eau et ajouter ¾ tasse de la sauce au mélange. Bien tasser dans un moule de 9 x 5 x 3 po et couvrir du reste de la sauce. Cuire au four à 357°F (190°C) pendant environ 90 minutes, ou jusqu’à ce que le dessus soit bruni et que la température interne soit de 160°F (70°C).
