(3) Blowdown Procedure
When the steamer is turned off, its blow down cycle starts and runs automatically. The complet e
cycle takes approximately 3 minutes .
1. Turn the ON/OFF Switch to t he OFF position to turn off the steamer. The red indicator light
in the ON/OFF switch turns off. Do not turn power of f at the main power switch during
blowdown.
2. Automaticall y, the drain valve opens and begins to empty water from the steam generator.
3. The fill va lve(s) opens for 3 minutes, to help cool the drain water and clean the drain valve.
4. At the end of the 3-minute blowdown cycle, the fill valve cl oses.
5. When blowdown is complete, the steamer can be restarted, or the shut down procedure
completed.
To restart the unit, refer to POWER ON (AUT OMATIC FILL) in Section 3,Part C.
To shut down the unit, refer to SHUT DOWN AND CLEANI NG, below.
B. SHUT DOWN AND CLEANING
This procedure should be performed at the end of each day or shift.
(1) Refer to Power OFF (Automatic Blowdown), and turn of f the steamer compartment. Allow 3
minutes for the complete blowdown cycle.
(2) Open the steamer doors and allow steamer to cool.
(3) Remove the slide rack s. Wash and rinse racks separately or clean them in a dishwasher
according to health requirements. D o not remove the drain screen.

Do not use a hose or water jet to clean this appliance.

Inside of steamer stays hot for a long time. Be careful
when cleaning inside steamer compartment.

SEVERE BURNS may result from exposur e to steam.
Do not open the steamer door before steam flow stops. Stand back
when opening the compartment door. Open the door sl ightly to allow
steam to vent before looking or reaching into cook ing compartment.
Do not reach into cooking compartment until the steam has cleared.
Do not reach into steamer or handle hot item s without wearing
heatproof gloves. Wet or damp gloves conduct heat, and may cause
burns when touching hot items.
