melt the shortening. It may be necessary to add solid shortening to bring the level up to the proper mark after the packed shortening has melted. DO NOT DISABLE OR CANCEL THE MELT CYCLE.
Shutdown
1.Press the ON/OFF switch 
to the "OFF" position.
2.Filter the cooking oil and clean the fryers (See Chapters 4 and 5).
3.Place the frypot covers on the frypots.
