Gluten Free Setting Recipe (Menu 8)

Gluten Free bread machine stages

For the Gluten Free cycle, you can expect the following things to happen as the timer counts down to zero. To begin: The ingredients are kneaded for the first time (5 minutes)

At 2:05, the dough is kneaded for the second time (10 minutes) At 1:55, the dough rises (60 minutes)

At 0:55, the dough begins to bake (60 minutes) At 0:00, the bread is finished.

Traditional Gluten Free Bread

 

Gluten Free

IMPORTANT: Carefully check labels to make sure all ingredients are Gluten Free

1 and 1/4 cup water

1 cup rice flour

3 tablespoons oil

2/3 cup potato powder

1 teaspoon vinegar

1/3 cup soybean powder

3 eggs

1/2 cup milk powder

1/2 cup tapioca

3 tablespoon sugar

1 and 1/2 teaspoons salt

1 tablespoon Xanthan

2 cups Gluten Free flour

2 teaspoons active dry yeast

1Measure and add liquid ingredients to the bread pan.

2Measure and add dry ingredients (except yeast) to the bread pan.

3Use your finger to form a well (hole) in the fl our where you will pour the yeast. Yeast must NEVER come into contact with a liquid when you are adding ingredients. Measure the yeast and carefully pour it into the well.

4Snap the baking pan into the breadmaker and close the lid.

5Press the “Menu Select” button to choose the Gluten Free setting.

6Press the “Start/Stop” button.

Dough/Pasta Setting Recipes (Menus 9 and 10)

Dough/Pasta Bread Machine Stages

For the Dough/Pasta cycle you can expect the following things to happen as the timer counts down to zero.

Dough/Pasta:

To begin: The ingredients are kneaded for the first time (5 minutes)

At 1:25, the dough rests for 5 minutes

At 1:20, the dough is kneaded for the second time (20 minutes)

At 1:00, the dough begins to rise (60 minutes)

At 0:00, the dough is finished.

Bagel Dough:

To begin: The ingredients are kneaded for the first time (20 minutes)

At 1:40, the dough is kneaded for the second time (10 minutes)

At 1:30, the dough begins to rise (90 minutes)

At 0:00, the dough is finished.

Dough recipe ingredients (2 lbs.):

2 teaspoons oil

4 and 1/2 cups flour

2 teaspoons salt

1 and 3/4 cups water

2 teaspoons dry milk

1 teaspoon active dry yeast

1 teaspoon sugar

 

Bagel dough recipe ingredients:

1 and 3/4 cups water

3 cups flour

1 and 1/2 teaspoon honey

1 and 1/2 teaspoon active dry yeast

1 and 1/2 teaspoon salt
