Pumpkin and Vegetable Soup

1 tablespoon olive oil
1 onion, chopped
2 cloves garlic, crushed
1kg pumpkin, peeled and roughly chopped 400g sweet potato (kumara), peeled and
roughly chopped
2 potatoes, peeled and roughly chopped
1 large carrot, peeled and sliced
1.5Litres chicken or vegetable stock
1.Heat oil in a large saucepan over medium- high heat. Cook onion for
