1.Les aliments de différentes densités exigent des quan tités différentes de chaleur pour conserver la nourriture à la température désirée. Par exemple, le boeuf haché aura besoin de plus de chaleur pour rester chaud qu’une sauce à la viande.

2.Pour que la nourriture ne se contamine pas et qu’elle ne transporte de maladie, toutes les nourritures chaudes devraient être conservées à 140 °F ou plus.

3.Pour maintenir la température minimale de 140 °F, utilisez un thermomètre pour la nourriture et faites les ajustements nécessaires du contrôle de la température.

4.Vérifiez périodiquement la température de la nourriture à l’aide d’un thermomètre pour la nourriture, particulièrement si la nourriture doit rester sur l’appareil pendant une période prolongée.

5.Cet appareil à deux plateaux est conçu pour atteindre une température minimum pour chaque réglage du contrôle des températures. (Voir ci-dessous)
